Chinese Chickpea Salad

This light and crunchy salad is de-li-cious. It is the perfect summer salad and a great way to get more cabbage into your diet. It is hearty enough to have as your main meal. In case you need some encouragement, cabbage is an immune system hero! It promotes healthy liver detox, contains Vitamin U to enhance the healing of damaged mucus membranes, and glutamine to promote better absorption of nutrients. Enjoy!


What You'll Need:

Head of Napa Cabbage 

1/2 cup chickpeas

1/4 cup fresh mint leaves, roughly chopped

3 scallions (white part only)

1 tablespoon sesame seeds (I like to toast them: heat on a frying pan on low heat)


Chop all ingredients and mix together. I usually wait to sprinkle sesame seeds on to the salad after it has been dressed

Sesame-Miso Dressing

What You'll Need:

1/4 cup sesame oil

1.5 tablespoons apple cider vinegar

1 tablespoon water

1 tablespoon miso paste


Whisk ingredients together and dress salad.

Tip: The longer the cabbage sits with the dressing the better. I dressed this salad the night before and had it for lunch the next day.
